Pina Colada – King Neptune’s Treat

Classic combination of Rum, coconut, lime and pineapple

Ingredients

Scale
  • 4 oz light rum
  • 4 oz cream of coconut
  • (2) 8 oz cans of pineapple chunks packed in 100% juice – separated
  • 1 oz fresh lime juice
  • 1/4 cup crushed ice
  • Paper umbrellas – garnish
  • Fresh coconuts – cracked open, drained and rinsed

Instructions

  1. Separate the pineapple, freeze the chunks and chill the juice
  2. Prep the coconut(s)
  3. When the pineapple chunks are frozen, add them, rum, lime and pineapple juice, ice and cream of coconut to a blender
  4. Pulse until combined like a slushy and the ice and pineapple chunks can be sipped through a straw
  5. Pour into a coconut shell and garnish with an umbrella
