Lime Cordial

A smooth and balanced lime cordial made with fresh limes, citric acid and sugar

Ingredients

Scale
  • 11/4 cup granulated sugar
  • 8 oz boiling water
  • 11/2 oz fresh lime juice
  • 89 grams of zest – about 4 large limes – zested with a microplane
  • 2 TBL food grade citric acid

Instructions

  1. Place the lime juice and zest in a blender, then pour in the boiling water
  2. Blend on low speed while adding the sugar and citric acid
  3. Raise the speed to medium and blend for 30-40 seconds to completely dissolve the citric acid and sugar to combine with the juice and zest
  4. Strain with a fine mesh strainer
  5. Bottle and refrigerate
