Billy Hall greeted us at the door of Halls Chophouse – Charleston like the most important guests to arrive that evening. He then proceeded to make every other guest feel the same way. It’s what they do and why they are so successful in the hospitality business. Well, ok, that and the terrific food.
We settled into our table enjoying pre-dinner cocktails, talking to Billy about his restaurant and I confessed our guilty pleasure watching the reality series Southern Charm, filmed in Charleston. Billy excused himself to attend to other matters, but returned shortly to introduce us to the show’s producer and cast member Whitney Sudler-Smith. Now that’s hospitality.
I have only one wish after our evening there and it’s that I lived in Charleston so we could return over and again until I sampled all their delicious cuts of meat and sides.

After a perfectly crafted martini, dinner began with a low country favorite, she-crab soup.
An unusual cut of aged, bone-in tenderloin filet perfectly cooked medium-rare with tomato and red wine bordelaise.
