At first blush wine and tequila seem ill-suited for one another, but they work together in harmonious fashion. So gird your loins and keep a clove of garlic, a silver bullet and holy cross on your person as protective amulets. You might need them when you venture into the devil’s lair.
If you order a margarita, it will be made with tequila unless you specify otherwise. Mezcal however, is a well kept secret outside Mexico and deserves consideration. The Oaxacan spirit is made with multiple varieties of agave and baked in underground pits. That imparts a smokier, nuanced flavor and aroma than tequila. Each can be used interchangeably in any maragarita at your pleasure.
