Argentinian flan with sweetened condensed milk and dulce de leche sauce

Ingredients

  • 4 eggs – whisked and beaten
  • 14 oz sweetened condensed milk
  • 13/4 cup water
  • 3/4 cup sugar
  • 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • Dulce de leche sauce
  • Blueberries, raspberries or sprig of mint for garnish (optional)

Instructions

  1. Preheat the oven to 350 and heat a full teapot of water to a low simmer
  2. Coat the bottom of each ramekin with dulce de leche sauce
  3. In a bowl, whisk together the water, sugar, vanilla extract and salt until the sugar and salt are dissolved. Add the condensed milk and gently whisk it in
  4. Now drizzle that into the eggs and gently mix to avoid creating bubbles and slowly strain the mixture through a fine mesh sieve into a lipped bowl
  5. Place the ramekins in a baking dish, then fill them equally with the custard mixture and let them set for a few minutes to allow any bubbles to surface
  6. Place the baking dish in the oven on a pull out rack and pour the hot water around them until there is about 1″ up the side of the ramekins
  7. Bake uncovered for 45 minutes or until a toothpick inserted in the middle comes out clean, remove the baking dish and let set for 5-10 more minutes
  8. Remove each ramekin individually from the water bath and set on a rack to cool for 45 – 60 minutes
  9. Serve immediately or cover with plastic wrap and store in the refrigerator
  10. If serving immediately, un-mold it by running a knife around the inside edge. Place a small plate over the top, turn over and jiggle the ramekin. It should drop onto the plate
  11. If serving after refrigeration, warm the flan in the microwave for 45-50 seconds which will loosen the dulce de leche from the bottom of the ramekin then follow the instruction above
  12. Warm and spoon some dulce de leche over the flan
  13. Garnish with berries and/or mint (optional)
