Lachlan Rose invented lime cordial by preserving lime juice with sugar for the British navy, helping sailors ward off scurvy during long voyages. This blend eventually became known as Rose’s sweetened lime juice.

Zest your limes with a micro-plane before you juice them! Reserve both the zest and juice.
Weigh your zest, using 8-9 grams for your cordial. Blend it together with the boiling water, citric acid, juice and sugar until the granules are dissolved and it is completely mixed. Cool, strain, bottle and refrigerate. Print
Lime Cordial
A smooth and balanced lime cordial made with fresh limes, citric acid and sugar
Ingredients
- 1–1/4 cup granulated sugar
- 8 oz boiling water
- 1–1/2 oz fresh lime juice
- 8–9 grams of zest – about 4 large limes – zested with a microplane
- 2 TBL food grade citric acid
Instructions
- Place the lime juice and zest in a blender, then pour in the boiling water
- Blend on low speed while adding the sugar and citric acid
- Raise the speed to medium and blend for 30-40 seconds to completely dissolve the citric acid and sugar to combine with the juice and zest
- Strain with a fine mesh strainer
- Bottle and refrigerate
