Guy Savoy-Las Vegas is what you envision as a French fine dining experience. Beautiful, but spare surroundings, excellent, but reserved service and outstanding classically prepared dishes. They earned two stars, worth a detour in Michelin-speak and we’re glad we did.
Their celebration tasting menu was off the table for us, because my dining companion over-indulged at lunch. However, the ala carte menu offered many delicious options.
Dinner at Guy Savoy-Las Vegas
A glass of Telmont reserve rosé champagne began our evening. Wine Spectator bestowed a Grand Award for 2022 on Guy Savoy, the highest designation reserved for the best wine lists in the world.
With twenty selections of fresh-baked bread to choose, we selected fennel and brioche cake bread, cut to order at the table.
Our serving of imported Brittany butter from a huge block to accompany our breads.
Amuse bouche with butternut squash, cream cheese, nuts and shallots (center). Hamburger sliders with mustard on brioche buns (lower left and upper right). Fried mashed potato fritter with saffron aioli.
The Dungeness crab and celery roulade with Kushi oyster and seaweed.
Kushi Oyster on the half shell, shallot and mignonette
Artichoke and black truffle soup, toasted mushroom brioche with black truffle butter.
Milk fed veal with crispy sweetbread
Fresh corn salad with popcorn garnish.
Legumes d’ Automne.
American wagyu filet over demi-glace, braised, rolled beef cheek with saffron aioli and popcorn shoots and orange powder.
Buttermilk ice cream & candied fig.
Earl Grey tea sorbet.
Dark chocolate ganache, crunchy praline and chicory sauce
The dessert trolley with many cookies, cakes, tarts, chocolates and pastries. We desperately wanted a to-go box, but managed not to embarrass ourselves.
Pecan tart and semi-sweet chocolate.
Chef Savoy has mentored many top chefs with Gordon Ramsay of Hell’s Kitchen fame numbered among them. He operates five additional restaurants in Paris alongside his flagship of the same name. This was as genuine a French dining experience you can have in the U.S. The two exceptions unlike being in Paris, were an English menu and fluent English speaking servers.
The highest praise I can give is to say I would enthusiastically dine here again.
